Blueberry Cottage Cheese Pancakes

I know, it may sound unusual, but I was craving two different things (this happens a lot actually) one morning and decided to experiment!

Here's the super easy recipe I came up with:

Ingredients:
1 cup cottage cheese
1/2 cup of blueberries
2/3 cup all-purpose flour
2 table spoons of butter
3 eggs
Light cooking spray

Directions:
  1. Combine cottage cheese, blueberries, flour, butter, and eggs in a large mixing bowl.
  2. Coat a large pan with light cooking spray. 
  3. Pour about 1/3 cup of batter into pan.
  4. Flip with a spatula when bubbles appear on the surface.
  5. Top with powdered sugar or maple syrup!

The upside to all of this, is that it's actually relatively healthy (depending on how much maple syrup you use)! I've always been skeptical about cottage cheese, so I looked it up and found these key points about cottage cheese:
